Cornmeal Pancakes

Breakfast & Brunch, Vegetarian

Ingredients

  • 1 cup water
  • ⅔ cup veg. oil
  • 3 eggs
  • 3 tbs sugar
  • 1 tsp vanilla
  • ¼ tsp salt
  • 1 tbs baking powder
  • ½ cup flour
  • 1 to 1½ cups corn meal

Directions

  1. In blender add water, oil and eggs
  2. Spin 5 seconds
  3. Add remaining ingredients
  4. Blend till smooth
  5. Pour onto hot griddle
